Strawberry Topped Cheese Cake
My son's requested dessert for his birthday this year...tasty choice!

Just a basic cheese cake recipe with a strawberry topping, super tasty and as easy as any of my other cheese cake recipes.

Ingredients
Crust:
1 cup gluten free graham crackers
1/2 cup sugar
6 teaspoons butter, melted
Cheesecake:
4 8 ounce packages cream cheese, room temperature
1 1/2 cups sugar
4 large eggs
1 Tablespoon vanilla extract
Topping:
1/2 cup sugar
3 Tablespoons water
1 teaspoon corn starch (dissolved in 1 Tablespoon cool water)
2 cups sliced strawberries
Instructions
Crust:
Combine all ingredients and press into the bottom of a greased spring form pan. Bake in a 350 degree oven for 10 minutes or until golden brown. Remove from oven and allow to cool.
Cheesecake:
Using an electric mixer, beat cream cheese and sugar until light and fluffy. Beat in eggs one at a time just until blended. Add extract. Pour filling into prepared crust. Place the spring form pan into a large roasting pan or baking dish. Fill the roasting pan with hot water, so that the water is halfway up the sides of the spring form pan. This creates a water bath that will ensure even cooking of your cheesecake. Bake for 55 minutes. The filling will jiggle much like a bowl of jello, the center should be set, not sloshy. Remove the cheese cake from the water bath. Allow to cool completely, refrigerate over night if possible.
Topping:
Combine the sugar and water in a sauce pan. Once sugar is dissolved and starts to boil over medium heat, add the cornstarch mixture. Once it starts to thicken, add the sliced strawberries. Heat until thick. Remove from heat and top your cheesecake as desired.
