Mike's Golden Pancakes safe

Golden, soft, fluffy and yet delicate! A new family favorite. :)

These great pancake's started with TanyaG's great Flour Mixture here on Gling. The problem with most Gluten-free pancake mixes is that to maintain fluffiness, they frequently become "rubbery" as they cool. These did NOT do that. They held together very well, also melt in your mouth. It is definitely a new family favorite. (Read curioduo's blog about these from 9.22.09.)

Prep time 15 minutes
Cooking time 15 minutes
Servings 24 5-inch pancakes

Ingredients

First, start with TanyaG’s great Flour Mixture:
Dry Ingredients:
1 cup white rice flour
1/2 cup corn starch
1 cup brown rice flour
1/2 cup sweet rice flour
1/4 buckwheat flour
4 tablespoons granulated sugar
2 tablespoons baking powder (gluten free)
1 teaspoon xanthan gum

Wet Ingredients:
4 eggs
4 tablespoons Vegetable Oil (or melted butter)
2 2/3 cups of Milk (or soy milk or rice milk or almond milk)

Instructions

First, start with TanyaG’s great Flour Mixture that you can find here on Gling, then I added the sugar, baking powder and Xanthan Gum for the dry ingredients.

Combine all wet ingredients, then mix the dry and wet ingredients together until evenly combined.

The batter may look a bit thick, but do NOT thin. If you do, they will not be as fluffy. Enjoy!

We have a big family, so most families will be able to halve the ingredients for a decent-size breakfast.

    TanyaG's flour mixture doesn't have the sugar in it...that is only for these pancakes, correct? They look WONDERFUL either way...I'll be trying these for sure! Thanks! :-)

    Yes, that's right. And I will correct that note in my recipe, because you are right. It's Tanya's recipe, then I added sugar, baking powder and Xanthan gum.

    Yes, it's a great item for your pantry. These were EXCELLENT pancakes ... I have 4 kids to judge. :)

    86gluten, Not sure what area your in but you can find sweet rice flower at Trader Joe's.

    GREAT pancakes! Made them this AM for my kids, they loved them. They turn out SO fluffy, very good! Only thing I changed was to add a bit of vanilla and a bit of salt. Other than that, I made them just as written. Love them!

    Mike made these this morning again and this time put a bit more milk in them. VERY YUMMY! And will feed a large crowd. :)
