Coconut Cookies dipped in chocolate
Even if you don't like coconut. You will love these.

I made these for my family and they really likes them. Our daughter doesn't like coconut but tried one of these cookies and really like them. They have a wonderful flavor to them.

Ingredients
1 cup coconut flour
1/2 cup sweet sorghum flour
1 cup white rice flour
1/4 tapioca flour
1 tsp guar gum
1 tsp xanthan gum
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 cup sugar
3/4 cup packed brown sugar
3/4 cup butter crisco
1/4 cup coconut oil
2 tsp gluten free coconut extract
2 eggs
2 tbsp heavy cream
1 cup of semi choc chips
Instructions
Pre-heat oven to 350
1. Mix together the butter crisco, eggs, coconut oil, coconut extract, sugars until well blended.
2. In a separate bowl mix flours, Xantham gum, guar gum. salt, baking soda, baking powder. Blend together.
3. Slowly add the powder mixture to the sugar mixture until well blended.
Bake for 8 to 10 minutes.
Chocolate Sauce to Dip cookies:
1. In a double boiler, or a microwave melt the choc chips with the heavy cream until melted.
2. Dip half of cooled cookie into the chocolate sauce. It is important to wait for the cookie to cool so that the chocolate on the outside of the cookie hardens faster.
3. Place cookie on a cooling rack so that the chocolate can become firm.
